Happy Monday everyone…
I have something to banish those Monday blues and a quick litter sweetener for you to make tonight to finish your day off nicely.
It is so quick and easy, you will wonder why you have never tried it before. You just need a few ingredients to make this delicious treat, think of it like an apple crumble but with no waiting around.
What you will need:
6 Pink Lady Apples
100g Plain Flour
50g Demerara Sugar
Ice Cream of your choice
That’s it…. I know so simple…
Preheat your oven to 190 Degrees Celsius or 375 Fahrenheit.
Take the top off of your apple and remove the core. You don’t want to cut all the way through to the bottom otherwise your stuffing will leak out so just take as much of the core out as you can, just the gnarly bits and the pips. Place them on a greased baking tray.
Make that crumble! Sieve your flour and sugar into a bowl, mix well. Add your butter and start working it into the flour and sugar mix with your thumbs and forefingers in a kind of pinchy motion, keep rubbing the mix together until they resemble a crumb consistency.
I spread my crumble on some grease proof paper and just pop it in the oven for 10 minutes, to give it a head start. For me it just makes sure the crumble will be cooked through and wont go ‘cakey’ inside the apple.
Put a little preserve in the bottom of the apple and spoon the crumble inside the apple. You can pile it high so it is overflowing. As everyone knows you can never have enough crumble topping!
Place the apples in the oven for half an hour. The apple should be starting to turn a caramel colour and the crumble should be brown on top. They wont be mushy to the touch, they should still be firm enough to cut it half with a spoon.
I put mine in a big bowl with a biiiggg scoop of vanilla ice cream on top!
