Open fiery fajitas

Ever just want to eat fajitas all day every day? Yeah same.. but I have discovered I feel so much better after eating low carb in the evening so I am always coming up with lower carb dinner options that are quick and yummy. 

Try these low(ish) carb fajitas for your midweek Mexican fix. 

What you will need for two people

2 large chicken breasts

2 bell peppers 

1 white onion

Fajita spice mix or make your own but I like this one

2 wholemeal wraps

1 head of romaine lettuce

2 salad tomatoes

1 avocado

Pinch of smoked paprika 

50g mild cheddar cheese

1 can of black beans

1 lemon 

Salt and pepper to season 

How to

Grill your chicken breasts and then shred. Slice your peppers and onions into strips and fry then add the shredded chicken. Add the spice mix with a tiny bit of water just so all the chicken and veggies are coated. 

While this is cooking remove the stone from your avocado and slice or dice whichever you prefer then add lemon juice, salt and pepper with some of the paprika to taste. Slice your tomatoes and shred your lettuce.  

Microwave the black beans for 2 minutes and then mash with a little olive oil, lemon juice and salt and pepper to taste. Grate some cheese so that it is ready to go. 

Stick the wraps under the grill just so they crispen up a bit, this makes for a good texture. Spread your black beans on the crispy wraps as a base.

Start building your open wrap, however you like and serve with some brown rice. It’s a really good recipe to make veggie or vegan as well and is super filling.
