If you are anything like me, you skip breakfast and then end up ravenous by 11 looking for something extra carby, because face it, carbs are life. Anyway the dark days are over, the sun is here and I’m actually feeling a little more motivated to get up and make breakfast. Only sometimes, not everyday, I am human.
I came across a few banana pancake recipes that were easy to make and I thought, I don’t really want a load of flour, sugar or oats in them and then I saw a couple of two ingredient recipes for these pancakes and I experimented with those. These pancakes contain three ingredients, that most of us have in the house already, so no excuses of ‘recipes always cost a fortune to re create’. By the way I feel ya on this because sometimes Jamie Oliver seems to think that we all keep a tub of gold plated saffron in our cupboard. So here you go…
Healthy Banana Pancakes
Ingredients for two people.
4 Free Range Eggs
1 Teaspoon Baking Powder
Optional: Handful of granola and honey
Simply mash five of the bananas up, I like mine a bit chunky, it gives the pancake some texture, sprinkle in the baking powder and mash with the fruit.
Whisk 4 eggs in a separate bowl and add to the bananas. Heat a good non stick pan on a medium heat, you don’t want the heat too high as they are very wet they take a little longer to cook through than normal. Spoon out a small amount of the mixture, a little goes a long way with these and the baking powder makes them fluffy. Cook until they feel firm with a spatula.
Chop up the last banana to have with them, sprinkle over some granola for texture and drizzle with honey. You are done!
